This summer Shrimp Pasta Salad is a lighter spin on the Southern shrimp pasta salad that I remember making frequent appearances at our church potlucks and family reunions growing up. Like the original recipe, it has a creamy dressing, baby salad shrimp, and is super duper easy to make.

  1. pasta of choice 1 box.
  2. cleaned and butterflied shrimp 1 pound.
  3. black olives 1 can.
  4. corn 1 can.
  5. creamy Italian dressing 1 bottle.
  6. Diced cilantro .
  7. diced tomatoes 2.
  8. mayonnaise 2 tbsp.
  9. Salad supreme seasoning .
  10. Parsley flakes .
  11. tspn olive oil 1.
  12. minced garlic 1.
  13. rain butter 1.
  14. Dried ancho powder or chili powder .
  15. Pepper to taste.
  16. Pepper jack cheese shredded or cubed as desired .

Instructions – Spicy Shrimp Pasta Salad

  1. Start by cooking pasta as directed, draining. And adding to large bowel.
  2. Drain corn and olives add to pasta, dice veggies and add to pasta.
  3. In a pan add olive oil, butter, garlic and cleaned shrimp season shrimp ancho powder, and pepper, cook till done set aside till cooled.
  4. Now mix dressing with mayo and salad supreme seasoning to taste and cooled shrimp to pasta, top with shredded pepper jack cheese or cubed cheese! Enjoy.

Stir salad again before serving and season to taste with more salt, black pepper, lemon juice, and cayenne pepper if desired. It adds a touch of elegance to any outdoor gathering or luncheon. If you make it ahead, add the basil just before serving. Drain shrimp and put in a large mixing bowl, pour lemon juice over shrimp and mix thorough then set aside. FINAL STAGE: As pasta is cooking put olives, green onions, celery and avocado into a large bowl and mix.
